MOJI DE AJO SHRIMP TACOS

INGREDIENTS:

  • ¼ c. olive oil

  • 1 white or yellow onion, sliced

  • 1½ lbs shrimp, peeled and deveined

  • 2 Tbsp clarified butter

  • 1 habanero pepper, seeds and stems removed, and diced

  • 4-6 garlic cloves, minced

  • Handful of cilantro, roughly chopped

  • 8 corn tortillas, toasted over a glass flame

  • 1 lime, half quartered, other half juiced 

This recipe cooks very fast, so it’s important to have all your ingredients prepped in advance and laid out!

RECIPE:

  1. Heat oil in a skillet over medium-high heat. Add onions and cook, stirring occasionally until softened and lightly caramelized—about 6-8 minutes. 

  2. Scoot onions to the sides of the skilled and add shrimp in a single layer to the middle. Sear for 1 minute on either side. Slide shrimp to the sides with the onions.

  3. Add the butter and melt, immediately adding the habanero and garlic. Stir constantly until very fragrant, about 30 seconds to 1 minute. Remove from heat and stir in cilantro and lime juice, mixing entire skillet. 

  4. Serve in warmed tortillas with lime wedges, and optional toppings (pickled onions, cabbage slaw, etc).
